Ingredients:
- 12 hard-boiled eggs
- 2 ripe avocado
- 2 tablespoon mayonnaise
- 2 teaspoon Dijon mustard
- 2 teaspoon lime juice
- Salt and pepper, to taste
- 12 sliced green olives (for the “iris”)
- A small tube of red gel icing (for the “veins”)
Instructions:
- Hard-Boil the Eggs: Place your eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat to a simmer and cook for 9-12 minutes. Once done, transfer the eggs to an ice bath to cool. Once cool, peel the eggs and slice them in half lengthwise.
- Prepare the Filling: Carefully remove the yolks from the egg halves and place them in a bowl. Mash the yolks with a fork until they are smooth.
- Prepare the Avocado: Cut the ripe avocado in half and remove the pit. Scoop out the flesh and add it to the bowl with the egg yolks.
- Add Flavors: To the mashed yolks and avocado, add mayonnaise, Dijon mustard, lime juice, salt, and pepper. Mix everything together until you have a smooth and creamy filling. Adjust the seasonings to your taste.
- Fill the Egg Whites: Using a spoon or a piping bag, fill each egg white half with the avocado mixture. You can create a slight mound to give the appearance of an eyeball.
- Create the “Iris”: Place a sliced green olive in the center of each avocado-filled egg half. The olive slice will resemble the iris of the eyeball.
- Add “Veins”: Using a small tube of red gel icing, draw thin, squiggly lines from the center of the olive slice outward, resembling bloodshot veins on the eyeballs.
- Chill and Serve: Refrigerate your avocado deviled eggs for at least 30 minutes to allow the flavors to meld and the filling to set. Serve your spooky eyeball deviled eggs on a platter, and watch your guests’ reactions!
